Any shape pan will work, but the pan should be fairly shallow- not much over 3 inches deep. (I use my old black 10" fryer.)
Select the recipe proportions to fit your pan. Put butter in pan and set it into a 425 degree oven, then mix batter while butter melts. Beat eggs until light, gradually beat in the milk, then flour. Remove pan from oven and pour batter into the hot melted butter. Return to oven and bake until puffy 20-25 minutes. Serve at once with sprinkled powdered sugar, syrup, or fresh fruit.
To serve, cut into wedges as for pie, pouring your fruit, syrup or sugar over the top.
Egg in a Hole
This was my favorite way to eat eggs when I was little, and Mom fixed them for me a lot. Well, at least when we weren't on a grapefruit kick or something.
Egg in a Hole is perfect for people who like their egg whites thoroughly cooked but like their yolks to remain less-cooked.
2 eggs per person
2 nice big slices of homestyle or potato bread per person
butter
salt and pepper to taste
1. Butter one side of a nice, big piece of bread while you're heating up the griddle.
2. Get yourself something that'll cut a hole in the bread about the size of a golfball. A biscuit cutter works well, but I used a juice glass this time. Cut a hole out of the middle of the bread, and set aside the piece from the hole.
3. Put the bread in the griddle, butter side down. After it has sizzled a little and browned the bread, crack an egg and carefully pour it into the hole.
4. After a minute or so, turn the bread to the other side. It won't matter that the second side isn't buttered because the egg white will coat it pretty well and brown it as the butter did the other side.
5. Grill the little buttered circles (the "holes"), too.
Serve with your favorite breakfast meat, topped with the grilled holes over the egg yolk.
Hammy Breakfast Casserole
This is my version of the sausage breakfast casserole that a lot of people make... I don't care much for sausage, so I've substituted ham, instead.
1 lb cooked ham, cubed
1/4 cup onion, chopped
1 garlic clove, minced
1 Tbsp butter
8 eggs
2 cup milk
1 cup Bisquick
1/2 cup Monterey Jack cheese
1/2 cup Cheddar cheese
1. Cube ham. Melt butter in pan and sauté onion, garlic, and ham until onion is soft. Set aside.
2. Beat eggs, add milk and Bisquick.
3. Spray a 9x13 dish with cooking spray.
4. Layer ham mixture between sprinkled grated cheese.
5. Strain egg mix over ham. (Must strain or will be lumpy.)
6. Bake at 325 degrees for 50 minutes or until set.
