Baked Black Cod Teriyaki

You can make this with or without the teriyaki sauce - either way, black cod (also known as "sablefish") is a wonderfully tasty fish!

2 steaks of black cod
1 Tbsp butter, melted
1/2 cup lowcarb teriyaki marinade
1 clove garlic, minced (1 gram)
black pepper

Mix together the melted butter, marinade, garlic, and a few dashes of pepper. Pour over cod steaks in a shallow glass dish, and bake at 350 for about 20 minutes or until fish flakes easily.

Puffy Fish Fillets

My mom, who is also on a low-carb diet, sent this one to me.  All comments below are from her.

Very tasty, hot or cold. Add a nice cool salad for a marvelous summer lunch.

Serves 2 to 3

2 tbsp. olive oil, melted butter or margarine
2 fish fillets, such as sole, cod, perch or other white meat fish, about 3/4 pound total
1 egg white
1/8 tsp cream of tartar
1/4 cup TARTAR SAUCE (see following)
Black pepper to taste

1) Preheat the broiler. Oil a flameproof baking pan with a little olive oil.

2) Rinse the fillets, pat dry.

3) Beat the egg white with the cream of tartar until stiff. Gently fold in the tartar sauce. Do not over mix. Set aside.

4) Place the fish fillets in the oiled baking pan. Brush with oil, sprinkle with black pepper to taste.

5) Broil the fish for 4 to 5 min per side. The fish is done when it is just opaque and flakes with a fork.

6) Spread the egg white mixture over one side of each fillet and broil for 1 to 2 minutes, until the mixture puffs and turns golden brown.

TARTAR SAUCE

(This is pretty much like the Tartar Sauce we already make, I think I would add onion to the following)

1/4 cup mayonnaise
1/4 tsp tarragon vinegar
1/2 tsp finely chopped fresh parsley
1 tbsp finely chopped dill pickle

Combine the ingredients, mixing well

I chop dill pickles in my food chopper, a whole lot at a time so that I will always have chopped dill pickle on hand. Otherwise you can grate it if you need it and don't have the chopped. If you haven't used the dill you will find that it is necessary. You can hardly find chopped dill in the grocery store but if you do it is much more expensive than if you were to do your own.

*Easy* Bacon Wrapped Prawns

This recipe is probably a lot easier than other bacon-wrapped prawn recipes you've seen. It's simple and delicious.

6 large prawns per person you're serving, shelled and deveined
1 five to six inch piece of raw bacon per each shrimp
1/4 cup spicy low-carb barbecue sauce (you can add some cayenne or horseradish to taste if you like)

Preheat oven to 350 degrees.

Wrap a slice of bacon around each large prawn. Secure bacon by skewering each shrimp and bacon slice through with a toothpick. Place in baking dish or on baking tray.   Brush each shrimp/bacon with bbq sauce. (Or you can dip each one in the sauce before putting it on the tray.)  You won't end up using all 1/4 cup of the sauce, so don't worry too much about the carbs, although if you mix tomato paste, chicken broth, and horseradish it'll have a lot fewer than regular cocktail sauce.  Bake in oven for about 20-25 minutes or until bacon is thoroughly cooked through.

Marinated Prawns or Shrimp

1 cup olive oil
1 Tbsp soy sauce
Worcestershire sauce, about a half-bottle (to taste)
2 cloves garlic, minced
1 tsp salt
red and green bell pepper, sliced
1red onion, sliced
2 cups taragon vinegar
1Tbsp brown prepared mustard
1 Tbsp paprika
3/4 tsp black pepper

2 lbs cooked shrimp, peel after cooking

Mix everything together in a shallow container.  Add the cooked shrimp/prawns and allow to marinate for at least an hour (stirring occasionally) before serving.

Mom's Salmon Patties

Got this from Mom today...

1 Tbsp chopped onion
1 Tbsp green pepper
1 Tbsp celery
1 Tbsp butter
1 large can salmon (0)
1 tsp horseradish (about fraction carb)
1 to 2 eggs
2 tbsp oatmeal (look it up, only about 5 carbs in these two tbsp)

Saute' onion, green pepper, and celery to soften, then mix it all with the remaining ingredients. Fried in oil and or butter, yum! In 6 patties or even 8 patties, not many carbs.
